(end of) summer peach mojitos


With the department stores slowly rolling in racks of sweaters and the sales sections filling with bikinis, Labor Day seems to mark the end of Summer and we are doing our best to soak up every last bit of the sunshine and trying to enjoy all that it has to offer, one our favorite things being peaches.  This labor day, we’re putting our feet up and sipping on this summer-inspired cocktail!

ingredients (for 1 drink):

2 peach slices (peeled)

2 lime wedges (peeled)

8 mint leaves

1 1/2 tsp. sugar

1/4 c. white rum

2  tbs. club soda


1. Puree the peaches and limes in a blender or food processor.

2. In a separate bowl, muddle the mint leaves with the sugar until the mint leaves are slightly bruised.

3. Stir the pureed mixture and the muddled mint together then add the rum and club soda.

4. Stir well and pour over a full glass of ice.  Garnish with a peach slice and lime on the rim, find a nice place in the sunshine, and enjoy!
