We made these mini ice cream sandwiches and they are both delicious and adorable. We bought mini chocolate chip cookies from Trader Joe’s and McConnell’s Vanilla Bean Ice Cream. Scoop a small amount onto a cookie and squish! We recommend making them at least a few hours before serving so you can leave them in the freezer to harden. You can make them plain or roll them in colorful sprinkles like we did below depending on the occasion. They are super easy and they taste like cookie dough ice cream, your guests will be delighted!
